Description
Denomination: DOC Collio
Production area: In the municipalities of San Floriano, Oslavia and Cormòns, in the Doc Collio area, with respectively 250m, 150m and 80m above sea level.
Grape variety: Sauvignon
Terrain: Hilly, formed during the Eocene, it presents an alternation of marl (silts and calcareous clays) and sandstones (cemented sands). Impermeable, it causes the superficial flow of water with consequent erodibility of the soil, which leads to a very gentle morphology.
Training system: Guyot.
Method of collection: Manual
Vinification and fermentation: After harvesting the grapes are separated from the stalk. The juice and the pulp undergo a cold maceration, then a light pressing that allows the separation from the skins. Fermentation in steel tanks follows.
Aging: The wine is left to rest for about six months on the lees and a few months in the bottle.
